Some great recipes that I use to incorporate more raw fruit and veggies into my diet.

Corn- Cauliflower Wraps:

Ingredients: (serves 4) · 1 Cauliflower· 1 Avocado· 5-6 Sweet Corn Husked· Tomatoes· Lettuce Leaves Directions:

1. Combine all ingredients in a food processor until they are mixed together. You are looking for a grainy consistency.
2. Top with chopped tomatoes and chives, then place on top of lettuce leaves. Eat like a taco and enjoy!!

* I add my favorite taco spices to this...cumin & chili powder
Lemon Basil Squash Pasta

· 2 cups packed fresh basil· 2 cloves of garlic· 1/4 cup extra virgin olive oil (raw of course and optional)· ¼- ½ cup raw pine nuts· 2 tablespoons of fresh lemon juice· 1 tablespoon of fresh lemon zest· ¾-1 teaspoons sea salt (optional) · 4 medium zucchini or yellow squash (or combination)· either sun-dried tomatoes or grape tomatoes (you can dry your own by placing them in the sun for an afternoon in the summer heat!)

1. In a food processor combine the garlic, basil, lemon juice, lemon zest, salt and oil and process until smooth. Add pine nuts and nutritional yeast and process.

2. If you are using non-organic zucchini peel them, if not just go ahead and spiralize all the zucchini or use a vegetable peeler. Use paper towels to blot the zucchini in order to remove some of the moisture.

3. Plate the zucchini pasta and pesto with tomatoes and serve.To see the original recipe, check out the Pure Joy Planet.
Peach, Avocado & Corn Salad

· 4 tablespoons olive oil
· 1/2 teaspoon sea salt
· 1/2 teaspoon ground pepper
· 2 scallions, chopped
· 1 shallot, finely chopped
· 1 1/2 tablespoons sherry wine vinegar
· 2 teaspoons fresh thyme leaves, chopped
· 1 teaspoon honey-dijon mustard
· 2 peaches, pitted, diced
· 1-2 avocados, diced
· 2 cob of corn worth of fresh shucked corn
· 4-5 cups mixed baby greens
Whisk 4 tablespoons oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, scallions, shallot, vinegar, thyme, and mustard in large bowl. Mix peaches, avocado, corn and greens into dressing and toss.
Latin American Cabbage

Raw Food Made Easy for 1or 2 People

1c Pressed Cabbage
1/2 ripe , seeded and diced tomato
1/4 cucumber, peeled , seeded, and thinly sliced
1/4 red bell pepper
2 tablespoons minced fresh cilantro
1 tablespoon fresh lime juice
2 teaspoons minced onion
1/1/2 teaspoons extra virgin olive oil

To press cabbage, flatten, thinly slice, add salt and let it sit in colander for 3 hours rinse and use.

Place all the ingredients in a mixing bowl and toss well. Marinate for 10 minutes at room temperature before serving. Store in a sealed container in the refrigerator for up to two days.
Zenith Green Bean Salad


Serving Size : 2 or 4 people

1 pound of Green beans washed and cut
1/4 cup sesame oil
2 Tablespoons of Tamari or Bragg's Liquid Aminos
1/4 Teaspoon of Chili Flakes
1 Teaspoon of Liquid Sweetner (agave, maple syrup, etc.)
1 Teaspoon of Sesame Seeds


Essentially you are making a sesame soy vinegrette and tossing the washed and cut green beans in it. Let this mixture sit and marinate for a few hours in the fridge the extra time it takes to sit is worth it. When I am too hungry to wait I have been know to eat it right away, still yummy.

I made the corn cauliflower recipe this afternoon. Plenty for sabbath, it was really good. Thank you Kim for the recipe. Eating raw is really expensive. I bought a lot of vegies today.
Yes, it is expensive. That is the main reason that I am not 100% raw at this time. It helps if you can join a co-op, especially if you want to eat organic. Local growers are also a great option.
